Requirements:- Core workplace managerial knowledge, team coordination and ability to manage people.
- Accessible, outspoken and of very low temperament and high tolerance.
- Good command of English and either Yoruba/Igbo Language.
- In-depth knowledge of the Service and Hospitality Industry.
- Basic MS-Word and MS-Excel processing skills.
- Intercom, E-mail and Internet culture.
- At least a B.Sc/HND in Hotel & Catering Management or equivalent degree.Responsibilities:- Superintend planning, coordinating and controlling the kitchen department-s activities.
- Identifying training needs of Cooks, Kitchen Stewards and Kitchen Attendants.
- To assist in developing and implement standard recipes; portions, ingredients, presentation and service guidelines.
- Cook only the best of delicacies for our customers- satisfaction and our standard and ensure cooks comply with same standard.
- Manage and train staff in collaboration with the General Manager according to predicted activity levels and services to be carried out.
- Make sure that all material and equipment made available to the department.
- Control department costs and changes within budget guidelines, and participate in departmental budget preparation.
- Make sure that all merchandise is used before the freshness date expires and adapt stock levels and production to predicted activity levels.
- Ensure that all aspects of cleaning schedules are set and ensure the staff follow them strictly.
- Maintain tight control of stock, keeping levels to a minimum and implementing good stock rotation.
- Responsible for the day to day smooth running of the kitchen.
